Mii no Kotobuki is a sake brewery located in Mii County, Fukuoka Prefecture.
The brewery, Mii no Kotobuki, is located along the clear waters of the Koishiwara River,
which flows into Kyushu’s largest river, the Chikugo River,
in the Chikugo Plain, an area of idyllic beautiful rice paddies.
Since its establishment in 1922,
the brewery has consistently focused on quality since its days as a rice wholesaler,
and more than 90% of the sake it produces is designated sake, which is also junmai sake.

Commitment to sake brewing
1 koji, 2 yeast, 3 mashu
As the saying goes, "One koji, two yeast, three makings", we believe that koji changes the taste of sake. At Mitsui no Kotobuki, the brewer himself is in charge of koji making. He is so particular about koji that he doesn't want anyone else to touch it, and he takes on the challenge of brewing sake.
Science, Sense, Passion
Sake breweries in Kyushu use the same rice and yeast. That’s why each brewery has its own unique taste in blending and fermentation. Sake brewing is done while conducting thorough research into fermentation techniques, science, nature, and human studies. And just like cooking, in addition to technique and taste, a strong passion for sake brewing is also necessary.

Our brewery values locality, quality and originality. This means using local rice (Yamadanishiki from Fukuoka Prefecture) and brewing high quality sake that only our brewery can produce. In the National New Sake Competition, we are the only brewery in Kyushu to win 90.5% of the prizes.

In an era when tank storage at room temperature was the norm, refrigerated storage of single bottles began.

Fourth generation brewer and toji
Tadatsugu Inoue
Born in 1970 in Tachiarai-cho, Mii County, Fukuoka Prefecture. Formerly employed by Haagen-Dazs Japan Co. Returned to the brewery in 1997 at the age of 27, and became the head brewer in 2002. Sake brewing is a combination of science, sense, and passion! He went to visit all the breweries in Japan that he thought were good to study and hone his sake brewing skills. Since becoming a master brewer, he has won 20-1 in the National New Sake Competition.
